Peanut Butter Banana Protein Pancakes

Made with Health Ninja High Protein Peanut Butter, oats and banana, these pancakes are soft, naturally sweet and packed with nutty peanut butter flavour. They are perfect for a quick breakfast, post-workout meal or weekend treat.

You'll Need

  • 1 ripe banana
  • ½ cup Health Ninja Oats
  • 1 egg / paneer / tofu
  • ¼ cup milk
  • 2 tbsp Health Ninja High Protein Peanut Butter
  • ½ tsp baking powder
  • 1 tsp oil or butter for cooking

For Topping

  • Banana slices
  • Health Ninja High Protein Peanut Butter
  • Honey (optional)
  • Chopped nuts (optional)


Step 1: Mash the Banana

Take 1 ripe banana in a clean mixing bowl and mash it well using a fork.

Mash until it becomes mostly smooth. A few small banana pieces are completely fine.

The riper the banana, the naturally sweeter your pancakes will be.

Pro Tip: Use a ripe or slightly overripe banana for the best taste and texture.

 

Step 2: Prepare the Pancake Batter

Add  ½ cup Health Ninja Oats, egg/ paneer/ tofu, ¼ cup milk and ½ tsp baking powder to the mashed banana.

Mix everything together until all the ingredients are well combined.

The batter should be thick but easy pour. If it feels too thick, add a little more milk, one teaspoon at a time.

Pro Tip: Let the batter rest for 2-3 minutes. This gives the oats some time to absorb the milk and makes the pancake easier to cook.

 

Step 3: Add Peanut Butter

Add  1 tbsp Health Ninja High Protein Peanut Butter to the batter and mix well.

This adds a rich peanut butter flavour while making your pancakes more satisfying.

Keep the remaining 1 tbsp peanut butter for spreading on the pancakes later.

Pro Tip: If your  peanut butter feels thick, mix it with a few drops of warm milk before adding it to the batter.

 

Step 4: Cook the Pancakes

Heat a non-stock pan over medium-low heat and lightly grease it with about 1 tsp oil or butter.

Pour a small amount of batter onto the pan to make a round pancake.

Cook for about 1-2 minutes, or until small bubbles start appearing on the surface and the edges being to look set.

Keep the pancakes small so they are easier to fllip. 

 

Step 5: Flip the Cook

Once the bottom turns golden brown, carefully flip the pancake using a spatula.

Cook the other side for another 1-2 minutes, until golden and cooked through.

Repeat with the remaining batter.

pro Tip: Keep the heat on the medium-low. Heat can brown the outside quickly while leaving the centre undercooked.

 

Step 6: Stack and Add Peanut Butter

Place the warm pancakes one on top of another to create a stack.

Spread the remaining Health Ninja High Protein Peanut Butter over the top.

Let it melt slightly over the warm pancakes for that delicious peanut butter finish.

 

Step 7: Add the Final Toppings

Top your pancakes with fresh banana slices.

You can also add a light drizzle of honey or sprinkle some chopped nuts on top if you like.
